A pressure cooker is a sealed pot with a valve that controls the steam pressure inside. As the pot heats up, the liquid inside forms steam, which raises the pressure in the pot. This high pressure steam has two major effects: Raises the boiling point of the water in the pot.

Hi guru. As pressure increases boiling point also will increase. In pressure cooker by adding weight on the top will increase pressure which will increase boiling point of the water inside, due to which it will take more time for water to reach boiling point hence heat transferred to water is utilized for water to increase its temperature rather converting its phase so latent heat is reduced. Due to which there is more energy available to transfer to food to get it cooked fast. Otherwise water reaches quickly to its boiling point then whatever energy we add from bottom goes as latent heat converting water into water vapor at constant temperature so there will be less amount of energy available to transfer to food to get it cooked. read less
