Generally speaking Maple will tend to have a warmer tone bringing out the Mids and lows whereas Birch will tend to be a little sharper, maybe more focussed tone bringing out a little more high end. I happen to like the Maple shells myself but think both are worth looking into DW makes shells in both....

However, there are always exceptions as manufacturers use different combinations of wood in layers for different drums. read less
